Spicy Chicken Enchilada Soup

Spring is like that person that just refuses to RSVP. Are you coming or not Spring?! I’m still over here making soup because it’s way cooler & windy than it should be. I do not do well with spicy food. I just don’t have the stomach for it. What I like about this soup is that its’ spicy but only to the point that it gives you a kick in the mouth but not a kick in the stomach. 😊

Spicy Chicken Enchilada Soup

Ingredients:

  • 1½ pounds boneless skinless chicken breast (boiled)
  • 2 T Butter
  • 2 T Flour
  • 1 onion, chopped
  • 1 T minced garlic
  • 1 32-oz. container chicken broth
  • 1 32-oz. can red enchilada sauce
  • 1 15-oz. can corn, drained
  • 1 15-oz. can pinto beans, rinsed & drained
  • 1 15-oz. can black beans, rinsed & drained
  • 1 10-oz can diced tomatoes & green chiles
  • 2 T ground cumin
  • 1 T chili powder
  • 2 C shredded Colby Jack or Mexican Blend cheese
  • 1 C sour cream
  • Garnish: sliced green onions & tortilla chips, extra sour cream if desired

Directions:

  1. Boil Chicken. If desired, you can reserve the stock & use it in your soup after straining or just use a container from the store. 
  2. Put butter in large sauté pan and add onion & garlic until almost softened 
  3. Add in flour & cook until light golden, making a roux 
  4. Slowly stir in chicken stock & enchilada sauce 
  5. Add in remaining ingredients except for sour cream and cheese & simmer for 15 minutes 
  6. Remove from the heat & stir in cheese and sour cream

I like to eat a big pile of chips on the side.
