Let’s Make Some Creamy Mint Chip Bars


Have you ever had an avocado so ripe you could turn it to mush with the slightest squeeze?  So ripe you’re afraid if you don’t use it within the hour it might turn black?

Lucky for you, this stage of ripeness is when an avocado is at its peak —when its buttery, creamy flesh is so green it looks like a foliage photograph with the saturation turned all the way up.

But what the heck do you do with an ultra-soft avocado?  Sure, you could turn it into guacamole, but you’re bored of it and besides, you don’t have any Tostitos for dipping! Never fear, friends — I have found a solution.  And the solution comes in the form of a sweet treat. These creamy mint chip bars taste like a combination of a York Peppermint Patty and a classic ice-cream sandwich. Plus, I used fresh mint from my garden to give this recipe an au-natural minty touch.

Okay, enough with the jibber-jabber.  The recipe is below.

Creamy Mint Chip Bars

Chocolate Crust

What you need:
1 cup almonds
1/4 cup cocoa powder
2 TBSP coconut oil, melted
2 TBSP agave

What you do:
1. Add all ingredients to a food processor and blitz until combined.
2. Press into the bottom of a brownie pan (8X8 works best) and place in freezer while prepping the creamy top.

Avocado Mint Cream

What you need:
2 hass avoados
1/4-1/3 cup agave (depending on your desired sweetness)
1/4 cup fresh mint
2 TBSP coconut oil, melted
Beans from 1/2 of a vanilla pod (or 1/2 tsp vanilla extract)
Pinch himalayan salt

What you do:
1. Add all ingredients to a food processor and blitz until smooth and creamy.
2. Scoop topping over chocolate base and spread. Place in freezer for at least 2 hours.
3. Cut into bars and serve!

*For extra decadence, drizzle with homemade chocolate (2 tbsp cocoa, 1 tbsp melted coconut oil, 1 tbsp agave)
*Store these bars in the freezer
