Ice Cream 2 Ways: Fat-free & Sugar-Free

In 2009, when the infamous Twilight Saga premiered on the big screen, there were 2 teams: Team Edward or Team Jacob. (By the way, I’m Team Independent Woman Who Don’t Need No Man). Nowadays, however, people have taken to Team No Sugar or Team No Fat.

Both diets have their pros and cons. High fat = good for hormones but not so great for digestion. High carb = good for quick-hitting energy but not for sustained energy.

But today, I’m not picking sides. I’ve got a recipe for both fat-free and sugar-free ice cream. So rest easy, because you can enjoy ice cream no matter which Team you’re on.

Fat-Free Banana Ice Cream

Serves 2

Ingredients:

  • 3 ripe, frozen bananas (broken into chunks)
  • 1/4 cup plant-based milk (I recommend Califia Farms)
  • pinch himalayan salt
  • teaspoon pure vanilla extract
  • ½ teaspoon xanthan gum (opt)

Method:

Mix all ingredients thoroughly, sprinkling in xanthan gum if using (will make fluffier and enhance creaminess). Then, pop the mixture into a tuppa-ware and freeze for at least 2 hours, mixing every 30 minutes. Enjoy! (Note: Enjoy ice-cream within 2 days for best texture).

Sugar-Free Coconut Milk Ice Cream

Serves 2

Ingredients:

  • 1 cup canned coconut milk
  • 3 tablespoons powdered stevia
  • dash himalayan salt
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon xanthan gum (opt)

Method:

Mix all ingredients thoroughly, sprinkling in xanthan gum if using (will make fluffier and enhance creaminess). Then, pop the mixture into a tuppa-ware and freeze for at least 2 hours, mixing every 30 minutes. Enjoy! (Note: Enjoy ice-cream within 2 days for best texture).
