Does anyone else feel like time went ahead & sprang forward but you didn’t? I have felt like I’m playing catch up more this month then in a long time & when you really break it down I think I have less on my to do list. I’m in serious need of a brain break. I winged this one the other night when what I had planned on the menu to make the family did not equal to what my energy level was. I got some rice going on the stove pot & kind of just stared at the chicken for a while. The good part of having a well-stocked pantry is you can usually throw SOMETHING together. I grabbed the Ortega taco seasoning packet & poured it into a bowl with some olive oil (enough to get the chunks out and have a smooth marinade). Then I just put the chicken in the bowl and evenly covered it with the taco seasoning, put it on a greased baking sheet & cooked it at 365 for 20 minutes. It doesn’t get much easier than that y’all. If I was feeling fancy I would have thrown some roasted corn & black beans in my rice. (I was not feeling fancy.) Here’s to hoping next time we talk our energy levels are higher & we can get more creative in the kitchen together!
Easy Chicken Dinner
2 lbs of chicken tenders
1 packet of taco seasoning
2-3 T olive oil
Combine taco season & olive oil. Distribute evenly among the tenders. Put tenders on a greased baking sheet & cook in a preheated oven (375) for 15 minutes. Remove & flip, cooking for another 5 minutes or until done. Serve with rice. If you are feeling fancy, add some veggies to your rice.
