Mini Quiche Cups


Once a week I make a breakfast for a group of about 25 people so I am always on the hunt for new ways
to present breakfast. I recently came across this one and love the way that recipe was originally written by
Peas and Carrots. As you know from following along with me, I love OPTIONS in a recipe. I chose to fill the
cups (I found mine at Ingles in the freezer section) half with ham and cheddar cheese and the other half
with broccoli and feta cheese.


  • 15 mini fillo cups (1 package)
  • 2 large eggs
  • 2 T half and half
  • salt and pepper to taste
  • a few teaspoons of your favorite veggies
  • 1 oz coarsely grated cheese (choose your favorite!)
  • any of your favorite toppings from the list below

Mix-In Ideas

  • spinach
  • broccoli
  • mushroom
  • onion
  • bell peppers
  • jalapeno
  • ground sausage

Toppings Ideas

  • red pepper flakes
  • paprika
  • chopped green onion
  • fresh chopped cilantro
  • salsa
  • hot sauce
  • bacon

Preheat oven to 350.
Place the frozen cups on a baking sheet covered in parchment paper.
I precooked my broccoli and ham before putting in the cups and then evenly distributed the cheeses. I found it easier to put in the add-ins and toppings before the egg mix so that I knew how much room I would have leftover for my egg mix.
Whisk together egg and half and half. Pour into individual cups.
Bake 8-10 minutes, until firm.
