Deciding on the perfect side to bring to someone’s house when invited over a meal can be stressful for some. My take on it is to bring something that you know you and your family will enjoy. This dish provides a touch of savory with the cheese and the health factor with the cauliflower.
Inspired by a recipe found on reluctantentertainer.com. Preheat oven to 375 degrees. Chop the cauliflower into bite size pieces and boil in salted water for 3-4 minutes until tender but not falling apart. Drain & set aside. While the cauliflower is cooking melt butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the milk slowly into the butter-flour mixture and stir until it comes to a boil. Continue boiling for another minute while whisking until thickened. Remove from the heat & add salt, pepper, nutmeg and cheddar cheese.. Combine freshly cut bread cubes with butter and swiss cheese. Sprinkle with salt and pepper. Bake for 20 – 30 minutes until the top is browned. Serve hot or at room temperature.
Cheesy Bacon Cauliflower Gratin
10 slices of bacon, cooked and chopped
1 head of cauliflower cut into bite size pieces
3 C 1% milk
1 tsp nutmeg
Salt & pepper
3/4 C fresh cut bread cubes
Preheat oven to 375
Saute bacon in a pan, chop and set aside
Cut cauliflower into bite size pieces & cook in a pot of salted, boiling water for 3-4 minutes
Melt the butter over low heat. Add flour, stirring constantly with a wooden spoon for two minutes until the roux turns golden brown. Slowly pour in milk, still stirring constantly until it comes to a boil. Continue boiling after adding all of the milk for 1 minute until thickened. Remove from heat.
Add salt, pepper, nutmeg & cheese to mix until thoroughly combined.
Mix in bacon and cauliflower in sauce and pour into greased 13×9 pan
Combine freshly cut bread cubes with butter and put on top of casserole
Sprinkle with salt and pepper.
Bake for 20 – 30 minutes until the top is browned.
