My husband and son do not like bananas or banana flavored foods, but they eat this recipe for banana bread right up, my son even requests it from time to time. To keep him from getting “hangry,” I add a good scoop of protein powder to the batter & it carries him a little further through his morning. We also snack on this bread.
My favorite way to eat it is hot from the oven with some butter spread on a slice (or two) with my feet up sitting on the couch. 😊 You can make this in one big loaf pan or two smaller loaf pans. I like to make them in two smaller loaf pans, keeping one for our family & sharing the other with someone else.
To start the recipe, you need some seriously browned bananas. I use 2 large ones, put in a large mixing bowl and mash/mix with a fork until they resemble baby food. I add in the rest of the wet ingredients & then the dry ingredients (protein powder completely optional but if using, only use 2 C of Bisquick instead of 2 1/3 C). Stir all together just until combined (don’t overmix). Pour into greased baking loaf pans & bake at 350 for 30-45 minutes until toothpick in center comes out clean.
2 large, very ripe bananas, mashed
1/3 C veg oil
½ tsp vanilla extract
1 C white sugar
2 1/3 C Bisquick mix
(other optional add ins – ½c chopped nuts or ½c chocolate chips)
Mix together wet ingredients
Add Bisquick mix stirring just until combined
Pour into greased baking loaf pans
Bake at 350 for 30-45 minutes until toothpick in center comes out clean
